Cashew Milk

Ingredients: 1 cup cashews, soaked for at least 4 hours 3 cups fresh cold water Optional: 1 date, pitted 1/2 tspn vanilla extract (or 1 vanilla pod content scraped out)     Instructions: Discard water from soaked cashews, rinse them well and add fresh cold water (3 cups) into your Vitamix container or any other powerful blender. Blend for 2 minutes until desired consistency. Place a mesh cloth or a nut bag over a large bowl and pour the cashew milk through. Squeeze all the milk out. (This step is optional). Serve chilled and enjoy!   Tips: 1. Drink cashew milk with the pulp without straining it to receive more nutrients. 2. The leftover cashew pulp can be dried out and used as cashew flour. Alternatively keep the pulp in an airtight container for a couple of days and can be used in baking or making smoothies. 3. Cashew milk will keep refrigerated in an airtight bottle for 3-4 days.
